Ingredients
  • 1 medium Zucchini
  • 1- 2 Tbs. Olive oil to coat bottom of pan
  • 2 Tbs. Water
  • Salt to taste (optional)
  • Pepper to taste (optional)
How to prepare
  1. Use julienne blade on your mandolin to make very thin strips of zucchini.
  2. Discard seeds (save for soup, stir fry or toss in a salad). You can also include seeds.
  3. Coat bottom of pan with olive oil
  4. Add zucchini and water
  5. Stir/toss until desired tenderness over medium to low flame
