Ingredients
  • 1 medium spaghetti squash
  • Parmesan cheese
  • Garlic powder
  • Basil, dried or fresh (dried to garnish, 2 tbs. of fresh)
  • Salt to taste (optional)
  • Pepper to taste (optional)
  • Butter or Olive Oil (1 - 2 tbs.)
  • Tomatoes or tomato sauce (optional)
How to prepare
  1. Bake @ 375o for 45 minutes, until easy to separate with fork. Al dente or slightly soft. Test with fork after 25 minutes as cooking time varies with size of squash.
  2. Wash squash, cut in half and remove seeds. Seeds can be rinsed, dried, and eaten.
  3. Cover bottom of baking dish with only enough water to cover the bottom.
  4. Cover each half of squash with baking foil and place in dish.
  5. Bake to desired tenderness. Caution: The longer its cooked it will become the consisency of baked sweet potato.
Notes
Remove pulp and rinse the seeds. Place on paper towel to remove excess water. Remove from the towel and place on parchment paper or paper plate to air dry for a day. Thereafter, you can eat or use for garnish. If you prefer and know how to bake them you can roast before eating.
